Breakfast Wednesday!

For this Breakfast Wednesday, it’s peanut butter and banana crepes! They may sound fanciful and difficult, but trust me, it’s super simple. The recipe for the crepes is as follows:

Ingredients

Crepes:

  • 1 cup of whole wheat flour (or all-purpose flour if that is in your food stores)
  • 1 tablespoon of sugar
  • 1/4 teaspoon of salt
  • 1 1/2 cups of fat free milk (if you want less calories – or other milk of your choice)
  • 2 large eggs, lightly beaten
  • a few drops of vanilla
  • cooking spray/butter for pan

Topping:

  • peanut butter
  • banana
  • optional: honey

In a large bowl, combine the flour, sugar and salt and whisk together. In a medium-sized bowl, combine milk, eggs and vanilla and whisk together. Add the milk mixture to the flour mixture and whisk together until all the clumps and bumps are gone and it looks smooth. Then cover with plastic wrap and put in the fridge for 15 minutes.

Heat an 8-inch pan on medium to medium-high heat. Once hot, spray the pan with nonstick spray or butter. Grab your 1/4 cup scooper and fill it with batter. Quickly pour the batter into the pan, and maneuver the pan, tilting it in lots of directions so that the batter evenly covers the pan. Be careful not to burn your crepes!! All stoves aren’t made the same. 2-3 minutes on the first side is good, and another minute or so after it is flipped. If the first few don’t look good – it’s ok – you’ll get it! Repeat process with remaining batter. Add a small amount of cooking spray or butter to skillet before adding batter for each crepe.

When they’re done, it’s time for the fun part! Spread peanut butter evenly over the crepe. Cut banana into desired sized pieces and place on the crepe. For extra sweetness, add some honey if you so desire. Fold/roll the crepe up, and voila! A delicious, nutritious breakfast.

Crepes can be cooked in a breakfast, dinner or dessert fashion, depending on what you put inside.
