Recipe: Pickled Herring or Salmon

Ingredients:

  • 4 cups vinegar
  • 2 cups water – give or take
  • ½ cup pickling spice – to your liking
  • 1 ½ tablespoons sugar
  • Lemon
  • Sliced onions (white or red)
  • 2 pound-ish herring or salmon – fileted and sliced into small jar sized pieces.

Directions:

  • Boil vinegar, water, pickling spices, and sugar. Cool.  
  • Layer soaked herring/salmon in a glass jar with the sliced lemon and onion.
  • Divide the spices between your containers if you are using more than one.
  • Pour the cooled pickling liquid over the layers and seal the jars.
  • Wait at least a day before eating. Store in the fridge for up to 1 month.
