For Breakfast Wednesday this week… the Sunshine Pegg-per (as named by the KNOM staff)!
This protein-packed carb-free breakfast is a great way to start your day! Bell peppers are naturally fat free. One large egg contains 6.7 grams of total fat, with 2 of those grams being saturated fat. The other 4.7 grams are unsaturated fat, which reduce blood cholesterol levels and risk of heart disease, and lower blood pressure.
Eggs are a great source of protein. One large egg contains 6.09 grams, to be exact. Your body needs protein to carry out all its daily functions.
Though the picture displays usage of a green bell pepper, we went with red. It ended up being the healthier option!
Bell peppers are impressive sources of vitamin C. An average adult needs between 75-90 milligrams of vitamin C per day. Just a half cup of red bell pepper has 95.15 milligrams! With the green at 59.9 milligrams per half cup. This greatly aids in the transmission of neurotransmitters and the prevention of infection.
Right next to vitamin C, bell peppers are good sources of vitamin A. Your body needs this vitamin for healthy eyes, bones, cells, and respiratory lining. Anywhere from 2,310 to 3,000 international units are needed for these functions in a healthy adult. A half a cup red bell pepper has 2,332.5 international units, while the green has 275.5 units per half cup.
